My mom always left it out, as the butter got so hard and unspreadable in the fridge. But I always refrigerate mine. I will take it out about 1/2 hour before using it, to have it soften some.

For those that live in the states Im sure your aware of Land O Lakes butter. Theyre based here in Minneapolis. I was in the building today. I was in their test kitchen. This is huge in the butter thread world. I believe this qualifies me as the King of the Butter thread. At least until someone can top that.

What its like to eat two lbs of butter
Esquire
The butter was refrigerated, so it was like biting into a hard ice-cream cone. Except that when you eat something like ice cream, you get a sense of deliciousness that draws you to eat more. Not with butter. In fact, after the first stick, it didn't even taste like butter. It didn't taste like anything. It coats your mouth like axle grease, so it's hard to swallow.
You really have to push yourself. A lot of people get tired from the fat very quickly. It slows down your metabolism, your vigor. I took smaller bites, making sure I swallowed before going on to the next stick. That made it a little easier. Afterward, I felt bloated, like at Thanksgiving dinner. I'm dairy intolerant, so the butter really turned my stomach. It was like taking a couple bottles of mineral oil. Everything came out of my system, even that piece of undigested fruitcake from eight Christmases ago. Then I felt fine. I had a bagel with butter the next day.

We found an AM radio station, Radio Disney. They said you could make your own butter by putting a few clean marbles in a jar of cream and shaking vigorously for ten minutes, but you have to get your parents' permission first.

Oh!
This is really a great problem !
I do refrigerate butter, mainly in winter when I buy 2 o 3 kilos for making cakes.
I keep in into the "frezer", so I may use it even 1 or 2 months later.
I heard that there is no problem.
Generallly we use olive oil, both for cooking and for salade.

When I worked on the railroad we had to keep temp in refrigerator cars at -10F. All that for public warehouse which means government shipments. They said butter will not ever actually freeze so must stay very cold or it will get rancid after a time in storage. It seems to be frozen but not truly frozen.
We kept butter for stores below 32F but not as cold.
