Mysteries of bog butter uncovered

Peat cutters often stumble on chunks of butter in the bogs.

Those who live in the countryside of Ireland and Scotland and dig up chunks of peat for fuel have long been familiar with bog butter. While gathering the compressed plant matter, which can be burned in fires, diggers occasionally slice into a white substance with the appearance and texture of paraffin wax.

This is thought to be the remains of food once buried in the bog to preserve it. Waterlogged peat is cool and contains very little oxygen, so it can be used as a primitive kind of fridge.The question is what type of food was buried in the peat. Local lore sometimes says that the waxy stuff is literally the remains of butter. For example, the seventeenth-century English writer Samuel Butler remarked in one of his famous poems that butter in Ireland "was seven years buried in a bog".

Keeping it fresh

* Salted Butter can be kept at room temperature for two to three days in warm weather, or for up to ten weeks in the refrigerator

* Unsalted Butter can be kept in the refrigerator for six weeks

* Butter can be kept in the freezer for up to 6 months, but might lose a bit of its flavour.

Soften it up

* There are lots of quick ways to soften frozen or refrigerated butter:

* Cut butter into small pieces, and set it on a plate over a bowl of hot water

* Beat butter with an electric mixer

* Roll butter with a rolling pin between two sheets of waxed paper

* Heat it in the microwave - but keep your eye on it - it doesn't take long

* Grate frozen blocks of butter to quickly soften

* Melt butter carefully in a double boiler over medium heat

* 1 tbsp of butter has only 33 mg of cholesterol.

Therefore, if a slice of toast is strapped to a cat's back, buttered side up, and the animal is then dropped, the two opposing forces will cause it to hover, spinning inches above the ground. If enough toast-laden felines were used, they could form the basis of a high-speed monorail system.

Situated in the historic Shandon area of Cork city, the Cork Butter Museum records and exhibits the heritage of dairying in Ireland and the history of Cork's famous Butter Exchange, which operated between 1770 and 1924. The Museum has three exhibition galleries, covering the origins of dairying in Ireland, the origins and development of the Cork Butter Exchange and the traditional craft of butter-making. A documentary of the revival of the Irish dairy industry in the 1960's, through the branding of "Kerrygold" and the impact of the EU, concludes the exhibition.

I think it's called 'Clarified Butter' and is for sauteing ...frying...
