i've been busy making stuffing...so it looks and smells like Thanksgiving around here. my son LOVES turkey:yh_chickn , so i cook them several times a year. here's a little trick i always do, maybe you do too...i make a HUGE bowl of traditional new england style herb stuffing, with Bell's seasoning, onions, chicken stock, butter and celery. then i put about half of it in a freezer baggie. it freezes quite nicely. so when i buy a pork loin roast:yh_pig ,(or thick-cut chops), i stuff and bake it, it's delicious! it's really convenient to have the homemade stuffing on hand in the freezer. :yh_drool

:yh_winkBELL'S is the absolute best seasoning for poultry anywhere. my grandmother used it, my mother used it, it should be in the stuffing, but also~~ melt a stick of butter, drizzle it over the bird's skin before roasting, and sprinkle generously with the Bell's, the aroma is incredible and tortures all who are waiting around to eat! and it gives the skin a wonderful flavor. i was surprised to know it is not available everywhere in the country. it's usually only in the stores around the holidays, so i stock up for the year.

It's torture reading your description, LC. And that picture to boot! I am sitting here trying to figure out what I want to eat, and now nothing in my fridge will compare to what I'm seeing!! Wish my monitor was scratch-and-sniff..... :yh_sigh

there is nothing like the Bell's! it is seasonal, i just stocked up and bought some for Bothwell too, they don't have it in UK. check your supermarkets before ordering, many do carry it. i wouldn't do a turkey without it, on the skin and in the stuffing.

My family is from Ireland, they had a farm over there and even though we have a big family we have never been very fond of turkey. Even though one of those monsters would feed us all.:D

We normally have a couple of geese which we roast in the aga and keep all the fat that comes off as it's damn expensive to buy.

when i lived in Mass. my parents and kids and i would go to a turkey farm and pick out a bird a few days ahead of time. (never buy a frozen turkey!) then it would be all ready to be picked up the day before Thanksgiving. best turkey in the world! it's got to be fresh!!

Making stuffing ahead and freezing some sounds like a good idea. Never thought of doing that.

Always wish I had some on hand when I do up a whole chicken, which I do often.

I may want to buy a turkey some time and do up one..invite company and all.

Interesting, doing up a turkey dinner with the works, is time consuming, but it is actually not too hard..all the same stuff and all. Last time I did up a full turkey dinner was about 3 years ago, when I had my cousin's two sons over. My cousin and her husband live in Florida now, and her son's were not going down, as they planned to go for Christmas. Could not afford two trips...so I invited them here.

It was rather fun, actually. One of the "boys" brought a desert, and the other brought wine, and it was a nice afternoon.
