Has anyone heard of the Cheesecake contest that Philadelphia Cream Cheese is having? I went and make a strawberry cheesecake with caramel toppings and a Oreo crust....I'm getting hungry just thinking about it, and it has a prize of $10,000 if you enter and win the recipe contest.
heres the link if anyone wants to check it out

Well, I like cheesecake and I love Baileys and the two of them make a wonderful combination.
Haven't made this recipe, my boss made Bailey's cheesecake and used to bring it into the office as a treat but I don't know which recipe he used but, hey, it's worth a try:) - If you make it, let me know how it turns out:D

omg i just remembered how coconut can be so delicious! thanks love light!
so i searched for a simple dessert recipe with coconut in it and i found the Fluffy 2-Step Cheesecake Minis from creamcheese.com
12 nilla wafers
1 pkg. (8 oz.) cream cheese, softened
1/3 cup sugar
1 tub (8 oz.) cool whip whipped topping, thawed, divided
1/4 cup baker's angel flake coconut, toasted
PLACE 1 wafer on bottom of each of 12 paper-lined medium muffin cups; set aside. Beat cream cheese and sugar in large bowl with wire whisk or electric mixer until well blended. Add 2-1/4 cups of the whipped topping; mix well. Spoon evenly into muffin cups.
REFRIGERATE 3 hours or overnight. Spread tops with remaining whipped topping. Sprinkle with coconut just before serving.
