I am making stuffed peppers for dinner tonight, at Rick's request. What are you having?

I've got a great leftover dinner from a Friday night visit to a restaurant.

Homemade pasta with grean beans, shrimp and lobster

Creme..here is how I do them. I usually use ground turkey and suschi rice. I par boil the peppers a bit to soften them. While the rice is cooking in the steamer, I cook up the ground meat, add some Italian seasonings, and chopped onion.

Then I mix the rice and meat together, and pour in some tomato sauce. Stuff the peppers, and cook at 350 for about a half hour. For the last few minutes I will sprinkle some shredded mozzarella and provolone cheese over the tops to melt.

I usually make 6 at a time. Rick will eat two, I will eat one, and the rest are our lunches tomorrow.

Yummy! :)

We had roast chicken tonight and hubby cooked it! :D

We had roast chicken, roast potatoes, mashed potatoes, carrots, peas, runner beans, cauliflower, he & the kids had yorkshire puddings, then thick, rich gravy and apple sauce!

It was absolutely delicious!

And there's loads left over! Want some? ;)

Its mega-yummy! :)

OK, so you don't cook it in a bath or anything or do you?

I'm going to have to try this, is there any particular reason you use the "Sushi rice"?

No, I just par boil them in plain water. no particular reason for the sushi rice, except that is the kind we keep on hand here at home, because we like it. we buy it in bulk at the asian food store.

I'm gonna make Pork Green Chili tonight. :D It's yummy on flour tortillas with fried potatoes and cheese.

This is going to sound strange but I am hankering for some stuffed cabbage. I never had this stuff at home it was in the (old time) cafeteria and smorgasbord settings (that are sadly gone):-1

I have the stuff for stuffed peppers & stuffed cabbage. I usually make both. That's a nice touch, Marie, the cheese on the top. I'll try that.

Nope, I'll freeze the leftovers for another night.



Ok here's my recipe for Pork Green Chili.

1 pork roast

4 cans chopped green chilis

1 small onion chopped

2 garlics chopped or 1 Tablespoon of garlic powder.



There's 2 ways of doing this.

Slow way..

In a skillet brown your roast on all sides to sear in the juices. Then place in your crockpot with the garlic, onion, and green chilis. Add bout 1 cup of water to keep everything moist. Cook on low for bout 6 hours. When roast is done, it should shred easily.

Ok the quick way

Cube your porkroast and fry in skillet with onions and garlic. As soon as all the pieces are white add your green chilis and 1/2 cup of water. Let simmer for bout 30 minutes.

If you want it more spicy, dice up a jalepeno and add it when you add your green chilis.



We eat this on tortillas with fried potatoes, shredded chedder cheese and sourcream.

Well, I am stumped for tonight, not sure what I am going to make. Funny thing, I am set for tomorrow though! I am off work tomorrow, so I will have more time to do up something special. I have a tougher time coming up with the spur of the moment stuff.
