Black Bean Cornbread Pork Casserole

I made this last night and it turned out well.

Season pork with a dry rub.

Roast a pork shoulder or butt at 325 deg in a covered pan w/ a couple inches of water in the bottom so it steams.

Cook black beans until tender.

Mix cornbread with diced jalapeno, corn and red pepper.

When the pork is done pull it with two forks until its shredded.

Mix pork in w/ beans.

Pour into a baking dish and add cornbread mix on top.

Bake at 350 deg for about 30 min.

Eat.

that does sound really good. I make something similiar, but I use pinto beans and hamburger meat.

Sounds delish.

I don't like pork but I will substitute some fake meat and give it a whirl! I love the cornbread part!
