Baked Potato Toppings

We´ve just acquired some potatoes, a lot of potatoes! About 50 lbs worth. I think we´ll be eating potatoes several times a week for at least 2 or 3 months. There are a lot of recipes we´ve collected, but baked potatoes are what we love the most. We want to be diet conscious so I´m requesting suggestions for alternative toppings (butter, margarine and sourcream are not on top of the DIET List, taste list yes!, diet no!!

Any suggestions will be greatfully accepted

I LOVE baked potatoes and normally top'em with butter and cheese...I'll have to think about HEALTHY toppings and get back to you....mmmmm

I love them floating in margarine but if I have to think healthy here, they're also good with tomato sauce and cooked onions and green peppers.

I like baked potatoes with chili on them. I also add cheese and sourcream.

Yum Yum!! Have them with chili con carne or tuna and salad or prawns & salad.
