Clarified, also called "drawn" butter is butter that's been heated and then
had the milk solids removed, leaving just PURE butterfat! Oh, YUM!! It
is used because that will allow the butter to reach a higher temp
without burning... OR to dip your lobster in!!

Hmmm, I got this far into this thread and also forgot to mention that I
like to dip my artichoke leaves in BUTTER... yeah, I knew I should mention
that, this thread being about BUTTER and all, and what you should do
with it.
I'd be remiss if I didn't mention it.
Especially knowing my good friend Lady Cop's enjoyment of this thread...
got to do all I can to keep her happy, dontcha know.
Poor dear gets to feelin' poorly if somebody doesn't post to the BUTTER
