Red Snapper!

Post by Captain Ray »

Tonight.. I think red snapper sounds good.

I like red snapper, because it is not a very fishy fish..

I am kind of limited on ways of cooking it though.. I usually fry it and make it into sandwiches.. snapper makes a very good sandwich.. but there are probably better ways to do it..

any good ideas out there?

Well. yeah.. I could google it I suppose.. I could just go to foodnetwork.com and get a recipe.. but it seems like the better ideas come from people who actually eat what they cook.

If you don't want to participate in the discussion, why did you post?

I thought I was being helpful since there are so many recipes out there. I havn't actually cooked it myself so I didn't know which would be the best one to suggest, which is why I suggested google.

As for the topic about red snapper.. I have a big box of red snapper in the freezer.. really.. its a BIG BOX filled with red snapper fillets... I went to the grocery store some time ago, and the purchasing agent for Roths (that is a fairly big grocer company in the pacific north-west) happened to be there... I was eye-balling some of the sea-food and he pulled me aside to show me a really good deal on some snapper... $1.98 a pound!! I am a sucker for a good deal!!

So I bought a big box of red snapper.. now I have all this fish that I don't know what to do with...

WOW! ... you would have been a fool to let that one pass you by ....

Fish , in fact ALL seafood is my favourite food. I could quite happily eat it every day. It's so versatile.

Oh, I do not think I have ever really had snapper before, only salmon, trout and halibut. Lots of crabs, scallops, mussels, oysters here on the Chesapeake Bay. Oh, and shrimp too!

I don't care too much for Salmon or Trout.. I can catch them all day long here.. but I just don't like the fish that much... too rich for me. I do love halibut though.. I prefer light colored fish, that don't taste to "fishy." but that's me..

Crab, Maryland crab in late August-oh, that is the best of all. I am looking forward to end of the summer yumminess coming soon!

I only catch my salmon and trout at the supermarket.............although I really went fishing once as a child.

OHH.. since you mentioned the Chesapeake bay.. after I got out of the NAVY.. I lived in Va. Beach Virginia.. it was an expensive place to live.. so any extra income that I had was spent on beer.. and bait.. Had it not been for the croppy and blue gill I might have drank myself to death..

Here is one I do with Haddock fillets. Place the fillets skin down on a baking pan. Sprinkle with lemon zest, and maybe some lemon-herb seasoning. Place a couple of thin tomato slices on each fillet and then sprinkle either some crumbled freshly cooked bacon, or some of the "fresh" type bacon bits (Hormel Makes a good kind)

Bake at about 350. I usually cook the haddock about 25 minutes..till it breaks apart with a fork. Not sure about snapper..if it is thicker, you'd want to cook longer, of course.

To be honest, Chonsi..I cannot take credit for that one. Rick invented it, and he usually makes it when we are having it.

Well ladies... tonights dinner did not go very well.. somewhere during the day.. I consumed some alchohol.. we are building a fence, and my neighbors brother cut the chain link fence wrong.. it ended up a bout 5" short... I ate my po'boy sandwich late in the afternoon.. and I never got around to making dinner. :-1

So I am hungry.. but it's late.. I might just have a bowl of cereal and go to bed.

There's always tomorrow.. and I have plenty of food in the freezer.

I always bake fish. Even my 2 & 5 year olds love it!

I put it in a pan, throw some oil/olive oil on it, maybe some lemon juice or lemon slices, fresh or dried herbs, salt and whatever seasonings I have on hand and cover it with foil and bake for 20-30 minutes at 350F. :-6

That's about as specific as I can get since I don't/can't cook with recipes, I make my own creations. LOL! :D
