I'm having a sort of nearly-vegetable-stew at the moment (it's got a small amount of minced beef in it, too) - which contains some broccoli (calabrese), amongst other things. If you peel the thick stalk, you can cut the white-carrot-like stick across into rounds. Make these just over 1/4" thick. If these are boiled for about a minute - no longer - and added to the dish, they make an excellent addition, being very much like "water chestnuts" in bite and texture.
HTH.

I was stalked by a broccoli once.
So I did a ninja attack on him and he ended up in hospital.
Sadly, now he's just a vegetable.
