Here's one of my favorite easy summer dinners....
~Grilled Salmon with dill and lemon~paired with a German Wheat beer or an old fashioned gimlet~
4 6-ounce salmon steaks or fillets
4 tablespoons lemon juice
2 tablespoons vegetable oil
1 tablespoons lemon zest
2 teaspoons dried dill
2 cloves garlic, minced
Preparation:
Combine lemon juice, zest, oil, dill and garlic in a large resealable bag. Add salmon and turn to coat. Refrigerate for 2 hours. Preheat grill. Remove salmon from bag and place on hot grill. Brush with marinade. Grill for about 4 to 5 minutes per side. Remove when done. Salmon should be light in color and flake easily through the thickest part.
~Gimlet.......half gin, half Rose's lime juice and a cocktail onion~

Lobster and champagne, and salmon with dill and for me a glass of a crisp dry white.. perfect, Kathy Ellen..
Here's one I like a lot too - and I'd serve it with cider.
Rabbit Casserole Normande
prep time 30 mins
cooking time 2 hours 20 min
1 x 3lb rabbit
1/4 cup seasoned flour
1/4 cup butter
1/2 cup shallots chopped
2 carrots sliced
2 parsnips sliced
1 small tart apple peeled, cored and chopped
2½ cups of cider
1 tablespoon made mustard
2 teaspoons seasoning
1/2 teaspoon thyme
1 bay leaf
Preheat the oven to 350f cut the rabbit into pieces and coat with seasoned flour.
Melt the butter in a flame proof casserole dish. Brown the rabbit on both sides and remove from casserole.
Place the shallots, carrots, parsnips and apple in the casserole.
Fry until lightly coloured pour in the cider. Stir in the mustard and seasoning.
Heat gently, stirring continuously until simmering.
Return the rabbit to the casserole add the bay leaf and the thyme.
Cover and place in the oven cook for 1½ to 2 hours until the rabbit is tender.
Adjust seasoning remove the bay leaf and serve.
