I made some coffee flavored truffles. Made the centers with bittersweet chocolate, and the shells are semi-sweet chocolate. OMG..I"m in heaven. I've got to quit eating them though, since they are for my orders. But ohh myy! :yh_drool:yh_drool

They sound delicious. How long does it take you to make a batch of these truffles??

Only takes 20 minutes to make the truffle centers. the time is in waiting for them to set up and putting thme in shells and such. I'm doing molds this year, so I have to make chocolate shells to put centers in, then cover bottoms with more chocolate.
But Basic Truffles are this
8 oz of semi-sweet chocolate (chocolate chips work fine)
3/4 cup of heavy whipping cream
2 Tablespoons of unsalted butter.
You can flavor these with your favorite liquors or the specialty candy flavorings.
Melt together on low heat till smooth. Then refrigerate till solid. Then you can scoop out small amounts to hand roll in small balls. Here you can either roll in coco powder, or freeze on a tray then dip in melted chocolate, then refreeze to set them up. If you decide to dip, work in small batches, because the centers will become soft quickly.

but if you guys are interested in making your own I recommend this, the following site to buy your flavorings, molds and such. I didn't care for their molding chocolate though, was to sweet. So if you decide to make molded truffles, melt 1 12 oz. package of chocochips with 2 TBSPNS of veggie oil.
