Red's Beans

So this week I've been hankering for beans and cornbread. There's something kinda magical about turning a bag of dried beans into a meal. There's something about beans, period. So I made two kinds:
Red's Basic Beans
2 cups dried pinto beans (sort and rinse first)
6 cups water (to start- you'll be adding more)
one chopped Spanish onion
2 cloves garlic
1 Tbsp chili powder
In a dutch oven put in rinsed beans and add all other ingredients.
Cook until beans are tender (mine took about 4 hours.)
Add more water as beans cook down so you get a thick broth.
I also made basic cornbread to soak up the pot liquor.
Red's Other Beans
This is ridiculously lazy!
2 15 oz cans dark red kidney beans (undrained)
1 15 oz can diced peeled tomatoes (undrained)
1 chopped onion
1 tbsp chili powder
1/2 tspn cumin
1/2 a bag of Morningstar Farms Crumbles, Boca Burger or regular ground beef (if using real beef, brown it first)
In a microwave safe bowl, add all ingredients and nuke for 8-1o minutes.
Eat.
