I'm vegetarian, too but I'm very lazy about cooking. I do have an enchilada casserole recipe ...I'll dig it up tomorrow! Yummy.

If you don't mind mixes, my husband and I love the "Fantastic" brand vegetarian dishes, especially the tacos. We are not vegetarians but we try to eat healthier since we are both in our 40's. We have tried their chili and their tacos and both are just as good as the kind that does have meat, but far lower in calories and fat:) We also like "Nature Burgers" that I'm not sure of the brand on, but it is prettty good:driving:

Thanks! I was wondering about Fantastic's other stuff. Especially the taco filling! I use Nature Burger (that was my first meat substitute) and I don't think it tastes anything like meat but it's very tasty in its own way. I use it for tacos mainly.
I also like Morningstar Farms' "Crumbles" for ground "beef" and some of their other fake products. Boca makes good stuff too.

This is unbelievably good. Even the carnivores ask for this recipe when I take my sunflower pate to parties.
Nutritional yeast is available at health food stores or "bulk " stores.
Easy Sunflower Pate
Ingredients
1 cup/ 250 ml sunflower seeds, ground
1/2 cup / 125 ml whole wheat flour
1/2 cup / 125 ml nutritional yeast
1-1/2 tsp / 8 ml basil
1 tsp/ 5 ml thyme
3/4 tsp/ 4 ml salt
black pepper (to taste)
1 or 2 garlic cloves, minced
1/2 tsp / 3 ml sage
1/2 onion, finely grated
1 cup/ 250 ml potato, finely grated
1-1/3 cup / 330 ml water
1/4 cup/ 60 ml canola oil (sunflower or corn oil may be substituted)
2 tbsp / 30 ml soy sauce
1 tbsp / 15 ml whole seed Dijon mustard
Instructions
Mix the dry ingredients together in a bowl. Grate the potato and rinse it thoroughly to remove excess starch. Squeeze and drain it after rinsing. Add the remaining ingredients in the order given, stirring in the potato last. Mix well.
Preheat the oven to 375 degrees F. Generously oil a 9" glass pie plate and scoop in the pate mixture. put in the oven and immediately turn the heat down to 350 degrees F. Bake 35-45 minutes until well browned. Let the pate cool 1-2 hours and then chill it thoroughly before serving to set it completely. It may be reheated later if desired. It is tasted when served at room temperature.
Enjoy the pate as an appetizer, snack or protein main dish. May be served on crackers or bread. Keeps 7 days refrigerated, or it may be frozen.
Yield: about 6 servings

Boca, that is the brand of burger that we used:) It isn't exactly like a burger, but it is good in its own way. We add mushrooms to it and Tom (my husband) uses a couple of seasonings that make it pretty tasty.

Textured Vegetable Protein (TVP) is really good in pasta dishes. I use it as a beef substitute in tacos and chili.
It's also available at the bulk store.
Portobello mushrooms make a great burger. A supermarket chain here sells frozen portobello and Swiss cheese patties. Great on the BBQ.
