Ok hi Guys and Gals

Im knackered!!!

Bloomin wind kept me awake all night and I hardly slept a wink...Had a audit in work today and this top woman came to do it in our office from Cardiff and she has given me a bloomin headache!

Other than that im well lol..

Hope you all good, I cant remember what I wanted to say from what I read here now, oh along I loved the pics and the idea to have one as a header...

Thanks for that Chez...........Im really trying here to take my mind off things and with everyones help I am getting through.........when I go to bed though I know it will be a different story............but I have to be thankful I have so much love here with my other little ones that are looking at me right now and I am sure seeing the pain I am actually feeling.Now.............about me not be adorable like them:-5:rolleyes:;)

Beef & Pasta Stew (with chunky veg)

Leeks

Onions

carrots

turnip (swede)

parsnip

potatoes

beef

seasoning ( whatever you like, black pepper, oxo cubes etc.)

packet mix of any beef casserole type to add to water

Packet mix of oxtail soup (can will do if you cant get packet)

Gravy powder or granules for thickening if desired.

Pasta Shells ( although twists or other shapes will do)

I dont really know amounts i just make a big stock pot full:D

Melt butter or marg in the pot and add chopped onions and leeks, medium heat. while they are cooking chop the veg up quite chunky, and add as you go along stirring now and again. add chunks of beef and keep giving a stir to brown the beef off a little. Add the packet mix of beef casserole to a jug of water and add to pan, then the soup mix to water and add to pan, add some more water if neccessary and seasoning. leave to simmer for abaout half an hour to three quarters of an hour, or until veg is nearly cooked. Add 2 or 3 good handfuls of pasta shells or shapes any will do ( i like the shells best):D keep stirring every few minutes and cook for a further 20 mins or so till the pasta looks just about done. Turn off the heat, put a lid on the pan and leave for about an hour, the pasta will swell quite a bit then.

I cut the potatoes and parsnip very chunky as they cook quicker than carrot and turnip.

Lovely for a cold winters day:D

Well its just chicken soup with rice and veg really chris:wah: its more of a soup than stew ,, not thick but more watery, just use chiken, cut the veg smaller, chicken stock and black pepper and herbs,, then add rice instead of pasta:D

I use cooked chicken. Usually if you have a very large Chicken and half of its is left after a meal, then you can use the rest for the soup:D
