When writing a long post I sometimes want to shift the text about so it makes better sense.
But the cut & past function isn't there for Forum Garden posts. I have to write it all out again.
Does anyone know why this is? It's there for other forums I belong to.

Hmmm ... cut and paste is a standard function built into browsers. Typically on windows:
ctrl-x: cut
ctrl-c: copy
ctrl-v: paste

It's not an FG issue. I can paste into my reply window without problem by right clicking.

When I right click on forum garden posts there is no copy & paste option for me. But there is for everything else I want it for. That's why I thought forum garden may be different. Hmmmm, very odd.

There are many combinations of operating systems and browsers and editor panes. I have no idea what yours is.
I can to a small extent manage to kill my copy option. If I call up a thread and block some text in a post and right-click on it I can select "copy". If I then edit a post and save and then block some text in a post and right-click on it my "copy" option is disabled. That's the extent to which I can suppress it. If I then call up an editor pane (by using Edit again, or Quote, or Post Reply) then I can copy/paste anything within that editor pane. I've found no combination which stops me from copying or pasting within that editor pane. You seem to have found a combination in which it's possible.
It would be sensible, if preparing a post of more than a few lines, to prepare it in an external text editor where you're capable of saving a recovery copy periodically either by hand or automatically. Surely that's sensible regardless of whether you have one-off puzzles or not. A squinty window in a browser's not the best place to think up screeds of text.
