I had a hamburger steak, seaweed soup and a fried egg- sunny side up. I think I ate too much for lunch, though - my skirt is feeling kind of tight around me now.

Did I ever mention that I'm a size 6-8 pants size? And a medium in shirts? Yeah, it does feel nice after 4 kids to feel a normal size...I don't really have to worry about what I eat, usually eat loads of veggies and don't buy frozen crappy diet foods that you microwave (loaded with salt)...walk in the afternoons & at night...:)

We had eggs, bacon and grits.

Not your average grits like you find in a quaker box, but real, stone ground grits from the Logan Turnpike Mill in Blairsville, GA.

My aunt sent me a care package for Christmas.

Grits are a coarse ground product of the grinding of dried corn.

The white inner 'meat' of the kernel.

Usually the milling stone that grinds corn produces corn meal which is rather fine, and grits which are coarser.

Grits can also be made from Hominy, a alkali-treated corn corn product.

Grits are cooked in water and can be eaten several ways.

Some folks like to eat them like a porridge, with sugar, honey, or syrup.

Others like them with stuff like bacon and butter.

Or, they can be eaten as a side dish, usually with breakfast, with eggs and meats and such, as you would hash brown potatoes.

Vaguely, but they are rather like potatoes, in that they will absorb flavors from the items they are cooked with.

My preference is simple.

A small amount of salt, and a large amount of butter. (not margarine)

Some folks like to crumble a little bacon into them while they are cooking.

You can replace some of the water with whole milk, or even cream, too.

to use as a side for dinner you can use olive oil instead of butter, too.

Very flexible.

Well Ill let you in on a fun way to prepare and enjoy your eggs and toast !

Butter both sides of the bread

Cut a round hole in the middle of the bread (small glass works well)

Place the bread in a hot pan (including the cut out piece)

Crack an egg, pour it in the middle of the hole in bread

Griddle until both sides are browned and egg is cooked

WHEEE
