I don't want to cook next week as it's going to be hot and humid again, and I have a lot of 'stuff' to do..



So, tonight I cooked some meals to freeze.......Each meal makes 4 servings.



I made sausage, pepper and onions and have extra homemade arriabiata sauce to freeze for another meal.

Another meal I made was penne pasta ala vodka...nice and spicy.

Tomorrow I'll make this new meal "penne with treviso and goat cheese" and also spaghetti pie.

This is actually 16 meals for the next few weeks:-6



Here's the recipe I found for the penne and treviso...



Penne with Treviso (radicchio) and Goat Cheese. This is Giada's recipe. I just added some spicy, chili oil.

Cooking time: 20 minutes....serves 4-6

Ingredients:

1 pound penne pasta

1/4 cup extra-virgin olive oil

1 clove garlic, halved

1 pound treviso or radicchio, chopped (about 4 cups)

3 packed cups (3 ounces) baby spinach

1/2 cup low-sodium chicken stock

1/4 cup balsamic vinegar

2 tablespoons fresh lemon juice

1 tablespoon kosher salt, plus more for seasoning

1/2 teaspoon red pepper flakes

5 dashes of spicy, chili oil

1 1/2 cups grated Parmesan

1 1/2 cups (11 ounces) goat cheese, crumbled

1/2 cup basil leaves, torn

Directions:

Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain and reserve about 1 cup of the pasta water.

In a 12-inch skillet, heat the oil over medium heat. Add the garlic and cook until fragrant and golden, about 1 minute. Remove the garlic and discard.

Add the treviso, spinach, chicken stock, balsamic vinegar, lemon juice, 1 tablespoon of salt, and red pepper flakes. Cook until the treviso and spinach until wilted, about 6 to 8 minutes.

Add the pasta and Parmesan. Toss well and thin out the sauce with a little pasta water, if needed. Season with salt, to taste.

Transfer the penne to serving bowls. Top each portion with the crumbled goat cheese and garnish with basil before serving.

Yesterday at the the farmer's market we bought some wonderful fruits, vegetables, ravioli stuffed with interesting things, breads and pasta and we'll be creating & inventing new recipes for several days. My daughter & son-in-law love to cook, as do I. Tonight, son-in-law made a terrific Indian dish and I did a bruschetta with fresh basil from their garden, the yummiest tomatoes, garlic & olive oil on a hearty bread with cheese baked into it.

Oh, that sounds lovely Zap.

I also love to cook. Took my bread maker out again and am making dough. I then shape the dough into different shapes, add olive oil, spices and cheese and bake in oven. I'm also making my own pizza again using the basil in my wee table top garden. It's a very tiny area, but I already have tommos, basil, oregano, rosemary, thyme, tarragon, jalapenos and cayennes.

These tomatoes that we got at the farmer's market were wonderful! Knowing that I am a tomato lover, my son-in-law searched for the right ones, for the bruschetta. I'll ask him the name of them. I've always said that New Jersey tomatoes were the very best, but these were equally as good. Not better but as good.

Hi Odie,

Bruschetta is really easy to make...just a little time consuming, but certainly worth it. The better organized you are, the faster it comes together.

Important:

1. Buy the ingredients that you like...a good Italian, French or sourdough bread that has a good, thick crust that has a crunch, ingredients for a good salsa, and a hot grill or oven.

2. Make your topping for the bruschetta first, let it marinate for an hour or so in fridge, and drain it well so it's not soggy.

3. For your toppings you can use some of the following ingredients if you like them: any grilled veggies, like eggplant, zucchini, bell peppers, red or sweet onions, mozzarella, my favorite goat cheese with chives, olives ( I love pitless Kalamata olives...They're salty and meaty), plum tomatoes (they're sturdy), sea salt (dont' use iodized salt), pepper, garlic, extra virgin olive oil, and spices like basil and oregano. Let everything sit in a bit of olive oil and balsamic vinegar. ****Make sure you use good extra virgin olive oil and balsamic vinegar...It makes a difference.

I'll post a salsa that my family likes for the bruschetta at the end of post....



Directions:

1. Cut your bread into smaller pieces and lightly grill on both sides.

2. Rub fresh garlic and extra virgin olive oil over one side of the bread and place on a serving tray.

3. Top with tomato sauce and your topping ingredients, and then drizzle with oil, salt, pepper and spices.

4. Lastly, add some freshness with basil, parsley or cilantro on the top. (I love cilantro the best) Also add cheese.

Voila...Yer done !!

It's only 5am but I already know dinner (at noon) will involve beer, maybe pasta.

We eat dinner at noon here in the midwest. Supper is around 5pm.

Why is there two (beers) here when only one is what I typed?
