Just wanted to make a thread discussing some vegetables and how some may like to make them differently than others, and vegetables you love, despite their "unpopular" reputation.

I have just tried freshly cooked spinach for the first time, and oh,..are those that buy spinach in the can missing out on what I think is the most delicious vegetable I have ever eaten.

I bought baby spinach in a bag to initially put in a salad that was meant for a side dish for a lasagna dinner we've had, and there was still some left over...

I love spinach to begin with, but this time I decided to just make the spinach out of the fresh spinach that was leftover in the bag with a pinch of salt and some vegetable oil...I think I will never by spinach in the can ever again. :wah:

Anyone have any vegetable dishes they love, and if so you can share them here...I would like to know some ways to cook vegetables because I know they're good for you, and my health is not going to take care of itself...

I also love cooked sliced carrots with a little butter and brown sugar(I know that negates the health aspect of it, but it's still delicious)...

you are so right. spinach in a can is gross. couldn't stand it growing up as a kid. had fresh cooked in college and WOW! baby in a salad is good too.

i really like asparagus. don't care for what it does to my pee, but it is dang tasty.

and butternut squash, with butter and brown sugar.

I have heard people talk about butternut squash and can never remember to try it...Maybe I will now...

Ironically enough, I never really cared for asparagus...I always hated asparagus as a kid, and would never try it...That and Brussels sprouts...

As for spinach in a can, I would still love to have spinach in a can if I don't have fresh spinach, or because it's relatively cheaper, if I wanted to stock up on a load of cans to save money, I would still love to eat canned spinach...but as for fresh spinach...it's undoubtedly my favorite.

be sure to have some peopole around when you get it. butternut is a little bigger than a football, so there's quite a lot. i don't care for it reheated the next day.

Brussels sprouts. Tender. Dredged in sweet creamy butter. A dash of paprika. Bacon bits. Lightly salted. A twist of freshly ground melange peppercorn.

I think I remember eating that once...

Tasted a little like sweet potatoes but a little blander. Maybe mostly because of the brown sugar and butter...

baked potato with sour cream, chives and bacon bits

carrots in ginger sauce

fresh green beans steamed with a dash of pepper and squeeze of lemmon

sauted mushrooms

Squash cooked with a little butter and brown sugar upon it

Any leafy greens tossed with a raspberry vinegerette

steamed cabbage with a dash of salt and a good bit of black pepper

I like them too...

Occasionally I slice them in quarter thick slices and fry them to make home made french fries...I believe you guys call them crisps.

BBQ'd Zuchinni

Broccoli in a sesame seed and soya sauce dressing

potatoes, onions and bacon bits tossed with butter and wrapped in foil on the BBQ

avacado straigh up

sliced cucumbers in a little viniger with a sprinkle of paprika

Fried Potatoes: fry sliced spuds in butter or olive oil and sprinkle during cooking with oregano, black pepper, salt and paprika.



Artichokes: boil in water till tender, drain, tear off leaves, dip bottom end of leaf in melted butter or mayonnaise, scrape off with teeth.



Green beans: mix with cream of mushroom soup and sliced onions, bake till onions are tender.



Fried green tomatoes: dip thickly sliced green tomatoes in egg mixture and seasoned cornmeal till coated evenly, fry in hot oil. Season with salt and pepper to taste.



Fried okra: (I buy frozen) dip okra in egg mixture and coat completely with cornmeal, then fry in hot oil till batter looks crisp. Salt to taste.

Asparagus steamed: serve with mayonnaise.

I love tomatoes! And celery..

I could never eat broccoli or cauliflower though..they remind me of little trees, and than I feel guilty. :o The cauliflower ones are like snow-covered trees.

Peas make my ears pop and it feels like I am on an airplane. It's strange..:eek:

Oh yeah, I love fried green tomatoes and batter dipped fried okra...

We just had fried okra on the side with a boiled potato...

I like mixed raw vegetables with ranch dip...

but I rarely like broccoli cooked, nor cauliflower...

I do love broccoli salad though...

don't know if anyone knows what that is...I'm sure most do...

It's broccoli mixed with bacon bits and shredded cheddar cheese with ranch dressing...and I think probably something else, but I can't remember how to make it...

Oh you should try it, as RedGlitter posted...I'm sure some may prefer their own batter type of mixture, but battered and fried Okra is probably tied for my second favorite vegetable behind fresh spinach/or a green...it all depends on what I'm in the mood for as far as which one I favor more. :wah:

I love vegetables very much but I think my all time favorites are tomatoes and spinach. Waite a minute,Is a tomato a vegetable or a fruit?

You might well know it as Lady's Fingers. Over here it's mostly used in curries so you could well find it in mulligatawny soup.

I love ALL fresh vegetables. They have an amazing taste that is just lost in frozen veg. I get through 2½lbs of Spinach every week. Still don't look like Popeye though :D

I could eat a whole plate of nothing but sprouts too. My mom had no trouble at all getting greens down me. Kids today don't know what they're missing with all the crap they substitute for vegetables and it's a shame.

If I make mashed potato, I always throw a cauliflower and some broccoli in too and sometimes an onion. I've also tried it with swede or sweet potato. Yeah...it's all good

Okay jumping in without reading hardly anything previously posted...just to let you know...

I LOVE brussel sprouts, brocolli, carrots, peas(preferably in casseroles), cauliflower, cucumbers, etc.

I didn't like spinach as a child, still not crazy about it cooked, but love in salads...

My kids will eat just about any veggie I fix for them, only one is as crazy over brussel sprouts like me though...the other two prefer beets or asparagus...etc...

I'm a believer of the kids getting all the veggies they can! have friends &relatives that don't encourage their kids to eat healthy....very sad to see children survive on pizza and chicken nuggets...
